Tender shrimp, crunchy vegetables, and a silky sauce come together in just minutes. Perfect for a quick lunch or dinner. 🥢 Ingredients Shrimp Dried wood ear mushrooms Cucumber Carrot Garlic Ginger Egg white Cornstarch Salt Black pepper Cooking oil A little MSG (optional) 🔥 Instructions 1️⃣ Soak dried wood ear mushrooms in warm water for 20 minutes until fully rehydrated. 2️⃣ Marinate the shrimp with salt, black pepper, egg white, cornstarch, and a little cooking oil. Mix well and let it sit for 10 minutes. 3️⃣ Cut cucumber into strips and slice the carrot. 4️⃣ Bring a pot of water to a boil. Add a little salt and oil. Blanch the cucumber, carrot, and wood ear mushrooms for 30 seconds. Remove and drain. 5️⃣ Heat 2 tablespoons of oil in a wok. Stir fry the shrimp until fully cooked, then remove. 6️⃣ In the same pan, sauté garlic and ginger until fragrant. 7️⃣ Add the blanched vegetables and stir fry briefly. Return the shrimp to the pan and mix well. 8️⃣ Make a slurry with 1 tablespoon cornstarch, 3 tablespoons water, a little salt, and a small amount of MSG.
