Video Description

This is a super easy and delicious ground beef chili recipe that anyone can do! INGREDIENTS Protein • 2 lb ground beef, broken up into small crumbles by hand • 1 lb beef chuck or short rib cut into small cubes Produce • 1 onion - small dice or finely chopped • 1 red bell pepper – small dice • 1 green bell pepper – small dice • 6-8 cloves of garlic – minced • 2-3 scallions (green part only) – thinly sliced • ¼ red onion - finely diced • 1 Acorn squash = 2 bowls ; cut in half, seeds scooped out Pantry Ingredients & Seasoning • Canned chipotle pepper w/ adobo sauce, 1-3 peppers depending on spicy heat preference, finely diced • Olive oil • Fresh ground black pepper • Kosher salt • 2 tbsp chili powder • 1 tbsp ancho chili powder • 2 tsp onion powder • 2 tsp garlic powder • 1 tsp smoked paprika • 1 28 oz can crush tomatoes • 1 28 oz can pureed tomatoes • 1 tbsp apple cider vinegar • 1 tbsp worchestershire sauce • 1 tbsp chicken bouillon paste or 1 cube • 1-2 tbsp maple syrup • 2-4 cubes of dark chocolate • 1 16oz can red kidney beans • 1 16oz can white/cannellini bean • Shredded cheddar cheese • Sour cream or Greek yogurt DIRECTIONS Ingredient Prep (These steps can always be done hours or a day or two before you cook.) 0:30 Prep produce ingredients as listed 0:56 Prep ground beef and beef chuck/short rib as listed. Lightly coat cubed beef with a little olive oil, salt & pepper. Cooking/Assembly 1. Heat Dutch oven or large pot over medium high to high heat and add oil when hot. 2. Add seasoned cubed ground beef. Let meat sear and don’t move around until you can see some browning. Remove when done with a slotted spoon. Brown in smaller batches for optimal browning/searing. 3. Add ground beef and break up until you see no large chunks while it is cooking through. 4. Add diced onions. Cook for 1-2 min. 5. Add garlic and chopped bell peppers. Cook for 1-2 min. 6. Add chili powders, onion powder, garlic powder, smoked paprika 7. Add back in the brown cubed beef with any juices that have collected. Cook for 1-2 min. 8. Add canned tomatoes; crushed and pureed. Mix well and reduce heat to low. 9. Add apple cider vinegar, bouillon paste or cube, worchestershire sauce, maple syrup, dark chocolate and chopped chipotle peppers. Season with Salt & Pepper. 10. Cover and simmer on low heat for 45-90 min. Periodically check and mix by scrapping bottom to make sure it’s not burning. Move to a smaller burner/lower heat as needed. 11. Preheat Oven to 385F. 12. While chili is simmering, set halved acorn squash in aluminum foil rings (see 12:50 in video). Make sure they are level. 13. Rub inside with olive oil, cinnamon and Chef Ange Base Seasoning E005: https://youtu.be/1Yt_jN1tDfY 14. Bake in oven for about 45 min and remove when slightly brown and tender. 15. Carefully pour out any liquid that has collected in the squash bowl while cooking. 16. Ladle in cooked chili into squash bowls and cover with shredded cheddar cheese. Put back in hot oven for a few minutes to melt the cheese. 17. Garnish with sour cream or Greek yogurt, scallion greens and diced red onion.
