Copycat Rao's Homemade Marinara Sauce INGREDIENTS • 2 (28 oz) cans crushed San Marzano-style tomatoes • 1/4 cup extra virgin olive oil • 2/3 cup minced white onion • 2 teaspoons minced garlic • 2 tablespoons chopped basil • 1 1/4 teaspoons salt • 1/2 teaspoon coarse grind black pepper • 1/2 tsp dried oregano PREPARATION STEPS 1. Strain the tomatoes, reserving the liquid, and place the tomatoes bowl. Add 1 1/2 cups of the strained tomato liquid. You can discard the remaining strained tomato liquid. 2. Put 3 cups of the crushed tomatoes into a blender and blend on high until the tomatoes are pureed into tomato sauce, and add back to the bowl of crushed tomatoes. 3. Place a 3 qt saucepan on medium/low heat and add the oil. When the oil is hot, add the onion and garlic and cook for 3 minutes....making sure the garlic and onion do not brown. 4. Add the tomatoes, basil, salt, pepper and oregano to the saucepan and turn the heat to medium. When the sauce begins to bubble, reduce the heat and simmer, stirring occasionally, for 30 minutes or until the sauce is thick. 5. This will give you 32 oz of sauce.
