"Lib" is what we call the insides (hearts) of a cored squash (Koosa) in Arabic cooking, which we always save and sautée into its own star dish/dip/spread/whatever we like. There are many methods people like to make theirs- this is how I usually make mine. It's incredibly simple, letting the squash really shine through. Get the happiest squash you can!
