When it comes to butter, you can use any of these three options for layers: 1. European-style butter: it has high fat (82-85%), gives croissant an amazing flavour, and is easier to handle. 2. Margarine: generally melts slower than regular butter. 3. Croissant-specific butter: some stores sell this type. a few tips: 1. prepare the butter first so it firms up again while you make the dough. 2. the butter should be firm enough so it doesn’t break while rolling. 3.if the butter melts while working, freeze it for 20-30 minutes; otherwise, you’ll end up with a brioche-style bread. 4. keep everything cold except butter for the main dough. you can even chill the dry ingredients in the freezer before making the dough.
