INGREDIENTS: 2 lbs (1 kg) lamb shoulder cut into large pieces (about 3 inches) 6 onions sliced 2 tsp. turmeric 2 tsp. salt 2 tsp. black pepper 4 cups white wine ΒΌ cup oil DIRECTIONS. In a pressure cooker add lamb meat and cover with 1/3 onions. Add turmeric, salt, and black pepper. Pour the white wine over the meat and onions. Cover the lid and cook on high pressure for 30 minutes. Remove from heat and allow the pressure cooker to cool enough to release the pressure before opening. In the meantime heat oil in a large frying pan over med-high heat. Add the remaining onions and saute until translucent. Add the contents of the pressure cooker to the frying pan and continue simmering over low heat for about 30 minutes or until the liquid is reduced. Serve with flatbread or steamed rice.
