Thai Black Olive Fried Rice (Khao Phad Nahm Liap Dhum) Ingredients: 3 cups cooked Thai Jasmine Rice (prepared the night before) 150 grams minced pork 150 grams medium prawns 3 cloves garlic, finely chopped 3 cloves shallot 8–10 Thai salted black olives 2 tbsp Chinese olive vegetables (for more flavor) 2 large eggs 1/4 tsp salt (for eggs) 6 tbsp oil 2 tsp Thai fish sauce 1 dash black pepper (optional) 2 chili padi, chopped (optional) 3 tbsp unsalted roasted cashew nuts 2 sprigs spring onion Thai limes, cut into wedges Methods: 1. Cook the rice the day before. Once cool, store it in the refrigerator. Break up any clumps from the cold rice so the grains are separate and fluffy. This ensures an even fry without sticking. 2. Wash and mince the pork. Marinate with 1 tsp fish sauce and 2 tsp oil for 15 minutes. Set aside. 3. Shell and devein the prawns, leaving the tails for aesthetics. Wash and pat dry. Marinate with 1 tsp sugar and 1/4 tsp salt. 4. Chop the garlic finely. Slice the spring onion and set aside for garnishing. Cut the limes into wedges. Chop the chili into small pieces, removing and discarding some of the seeds. 5. Heat oil and beat one egg with a pinch of salt to make an omelette. Cut it into strips and set aside. In the same wok, add 1 tbsp of oil over medium-high heat and scramble the second egg. Set aside. 6. In the same wok, add 1 tbsp of oil. Sauté the shallots and garlic until aromatic. Add the prawns and olive vegetables, frying until just cooked. Remove from the wok and set aside. 7. In the same wok, add 2 tbsp of oil over medium-high heat. Add the black olives and minced pork, frying until the meat is fully cooked. 8. Add the prawns and scrambled egg back into the pan. Stir in the rice to the meat and olive mixture. If needed, add a little water to the rice to loosen it. Continue to fry until well mixed. 9. Add fish sauce, a dash of pepper, salt, and chopped chili padi if desired. Mix well. 10. Plate the Thai olive rice. Add the side dishes of prawns, sliced omelette, sliced onion, roasted cashew nuts, and spring onion. Garnish with lime wedges.
