It’s an old-fashioned recipe I found in a bundle of handwritten recipes, and it’s quickly become a favourite. The texture is soft and airy, and it actually gets better after a day or two — perfect for afternoon tea or a make-ahead dessert. In this video, I use pitted morello cherries from a jar, but tinned black cherries work just as well.
