Eggplant has been on the back of my mind as an ingredient that I must learn how to use. It is one of those odd shaped, odd colored vegetables that I always skip over at the market. When I saw that Paula Deen had a recipe for Butter Burgers, my mind immediately went to this horrible tale my sister told me of these poor people Wife Swap. They seemed to love and cherish Butter Burgers. I knew that I needed to do more than put a garden burger on a bun, but I needed to infuse a wholesome vegetable. It needed to be vegetable that would add diversity to one's diet. Eggplant came to the rescue. Find me: Twitter: http://twitter.com/SweetestVegan Facebook: http://www.facebook.com/sweetestvegan Pinterest: http://pinterest.com/sweetestvegan/ Blog: http://thesweetestvegan.com/ Eggplant Burgers Recipe - Vegan Turkey Burgers Recipe Serving Size 2 patties; easy to double Ingredients: 1/2 large eggplant, slice 1/4 inch thick salt and pepper to taste 2 tablespoons olive oil 1/2 onion, diced 1/2 cup oatmeal 1 teaspoon liquid smoke 1 clove garlic, minced Meat of 1 avocado, chopped 1/2 tomato, diced 1 tablespoon lemon juice Directions: Preheat oven to 450 degrees F. Lay out eggplant slices on a baking sheet and lightly salt and pepper. Bake the eggplant for 20 minutes. At the 10 minute mark, flip the eggplant slices, then return to the oven to finish baking. While they are baking, place a large skillet over medium high heat. Add olive oil to the pan and once heated, add in onions. Sauté the onions until soft, translucent, and lightly browned. In a large bowl, use a potato masher to ground together oatmeal, liquid smoke, onions, and eggplant. You may want to remove the skin of the eggplant and you may not. Once the stuff in the bowl resembles ground turkey, form patties to the size of your liking (they will not shrink). Place them in the hot skillet. They should take about 5 minutes to cook on each side. Back in the large bowl, stir together garlic, avocado, tomato, salt, pepper, and lemon juice. Now you can form your vegan eggplant burger. Take a vegan hamburger bun, lay on your eggplant patty, and top with makeshift guacamole. Enjoy.
