For Instant Bhatura Recipe, click here - https://youtu.be/oGD5T6pzOGI Pindi Choley Recipe: Chickpeas (Chana) - 250 gms Water - 4 Cups Salt - 1 tsp Tea Bags - 2 nos Black Cardamom - 2 nos Masala: Cumin Seeds - 1 tsp Cinnamon - 1 Inch Cloves - 4 nos Coriander Seeds - 1 tbsp Fennel Seeds - 1 tsp Mace - 1 no Cardamom - 3 nos Black Cardamom - 1 no Ajwain (Carrom Seeds) - ½ tsp Black Peppercorns - ½ tsp Pomegranate Seeds - 1 tbsp For Gravy: Oil - 4 tbsp Onion (puree) - 2 nos Ginger Garlic Paste - 1 tbsp Asafoetida (Hing) - ½ tsp Tomato (puree) - 3 nos Kashmiri Chilli Powder - ½ tbsp Black salt - ½ tsp Sugar - 1 tsp Salt - ½ tsp Dry Mango Powder - ½ tsp Kasuri Methi - 1 tbsp Coriander Leaves (chopped) - 2 tbsp Cooking Instructions: 1. Soak the chickpeas overnight with 3 tea bags and 2 black cardamom. Pressure cook after soaking for 5 whistles with the tea bags and salt. 2. Combine all the ingredients for the masala and dry roast for 4 minutes, until aromatic. 3. Blend in a mixer grinder to a fine powder. 4. For the gravy: heat oil in a kadai, add the onion paste, ginger garlic paste and asafoetida and saute until the raw flavour goes. 5. Add the tomato and saute until soft for 3 minutes. Add the red chilli powder, salt, black salt and mix well. Add the ground masala. Cook until the masalas are cooked and the oil begins separating. 6. Add the boiled chickpeas. Simmer for 10 minutes. 7. Add the dry mango powder, kasuri methi, ghee and chopped coriander leaves. Cook uncovered, stirring occasionally until semi-dry.
