Boursin Caprese Dip Homemade Boursin cheese; recipe follows below (or use the store bought kind if you must) 1 c fresh tomatoes, diced rather small 1/3 c fresh basil, finely chopped 1 tsp minced fresh garlic 1/2 tsp salt 1/2 tsp olive oil 1 tbsp balsamic vinegar (the good, thick kind) Allow the cheese to come to room temperature (or close to it) and spread it in a serving dish. In a mixing bowl, combine the diced tomatoes, the finely chopped basil, garlic, salt and olive oil; mix well and pour mixture on the cheese. Drizzle with the 1 tablespoon of balsamic vinegar. Chill until ready to serve. You can bring out the veggies or chips but Iβm serving mine with sourdough crackers (sweetened with honey). Enjoy! Homemade Boursin Cheese 8 ounces cream cheese, softened 4 ounces (1/2 a stick) unsalted butter, softened 1/2 tsp dried parsley 1/2 tsp dried chives 1/4 tsp garlic powder 1/4-1/2 tsp salt (I used 1/3 tsp pink Himalayan salt) 1/8 tsp white pepper 1/8 tsp white vinegar In a mixing bowl, beat softened cream cheese and softened butter, with a mixer, until smooth. Add remaining ingredients and mix well with the mixer. Transfer mixture into a piece of cellophane wrap and place it in a storage container that will hold at least 1 cup volume. (You donβt HAVE to have the cellophane wrap but it just makes it easier to remove from the container when needed.). Place lid on the container and store mixture in the fridge until ready to use.
