Ingredients: 2 aubergines cubed flaky salt 2 tsps black pepper olive oil (optional) For the sauce: 1/2 large onion diced 4 minced garlic cloves 2 tbsp tomato paste 2-3 cups dry red wine 2 14 oz cans diced tomatoes 1 8-14 oz can of tomato passata 2 tsps dried basil 2 tsps dried oregano 1.5 tsps dried thyme 1-2 tsps red chili flakes 1 lb cooked favorite bean based pasta quick vegan parm: 3/4 cups raw walnuts 3 tbsp nutritional yeast 1.5 tsp nori flakes (dulse flakes work well, too!) 1 tsp garlic powder
