Nolen Gurer Kachagolla is a popular Bengali sweet that originates from the Indian state of West Bengal, especially during the winter season. Ingredients: To make the Chhena: - 1 liter Full-fat milk - 1+½ tbsp Vinegar - ¼ cup Water To make the Kachagolla: - Chhena from the above - ¼ cup Nolen Gur (date palm jaggery) - 1 tbsp Pista (chopped) To garnish the Kachagolla: - 1 tsp Pista (chopped) Instructions: 1. Pour 1 liter of full-fat milk into a heavy-bottomed pan and bring it to a boil. 2. Once the milk starts boiling, gradually add 1+½ tbsp of vinegar and ¼ cup water mix to it. Stir continuously until the milk curdles and the whey separates from the chhena. 3. Strain the chhena using a muslin cloth or a fine sieve. Rinse the chhena under cold running water to remove any traces of vinegar. 4. Squeeze out excess water from the chhena and hang it for about 15 minutes to drain any remaining water. 5. In a wide mixing bowl, crumble the chhena obtained in the previous step. 6. Heat ¼ cup of Nolen Gur in a pan on low heat until it melts and forms a syrup-like consistency. 7. Add the crumbled chhena into gur and mix well and cook for 10 minutes to form a smooth, soft dough. Add 1 tbsp of chopped pista to the chhena mixture and combine it evenly. 8. Grease your palms with a little ghee or oil to prevent sticking. Take small portions of the chhena mixture and shape them into round balls or oval shapes, as per your preference. 9. Garnish each kachagolla with a pinch of chopped pista on top. Allow the Nolen Gurer Kachagolla to cool for a few minutes. 10. Once cooled, serve the delicious Bengali sweet on a plate or in individual bowls.
