Instructions

  1. 1In a blender or food processor, combine the cooked beets, Greek yogurt, olive oil, apple cider vinegar, and honey (or maple syrup).
  2. 2Blend until smooth and creamy, scraping down the sides as needed.
  3. 3Add garlic powder, salt, black pepper, and lemon juice to the mixture.
  4. 4Blend again until all ingredients are well combined and the dressing is smooth.
  5. 5Taste and adjust seasoning if necessary, adding more salt or lemon juice to your preference.
