NYC Calzone/Spinach, Pepperoni & Ricotta Cheese (repost- original deleted) When I think of New York, I think of big, yummy, cheesy Calzones! To me, it’s better than pizza. I love having the melty gooey cheese and pepperoni on the inside of a delicious crust. I love dipping anything, so I have a great Spicy Marinara sauce for dipping. I'm ready to cook. Let's do this together, step-by-step! Total Time:1hour Makes: 4 Calzones Dough • 1 cup warm water • 1 Tablespoon olive oil or melted butter • 2 Tablespoon sugar • 1 teaspoon sea salt • 1 Tablespoon dry active yeast • 1/2 teaspoon each of basil, oregano, and garlic powder • 2 3/4 cups AP flour Filling 1 1/2 cups cooked spinach, squeezed completely dry 1 cup ricotta cheese 1/2 cup freshly grated Parmesan cheese 1 cup chopped pepperoni Directions 1. Preheat oven to 425 degrees F 2. In a mixing bowl combine the oil, sugar, salt, seasonings, and yeast 3. Add warm water all at once and stir thoroughly to dissolve 4. Gradually add the flour until you have a workable, but not dry, dough 5. Knead on a clean, floured surface for around 8 minutes 6. Place into mixing bowl, cover, and let rise in a warm place for 1 hour or until nearly doubled 7. After the rising period, punch it down and divide into four equal parts. 8. Roll each part into a circular shape–aprx 8″ in diameter 9. Mix filling, holding back the pepperoni. 10. Place ½ cup of filling on half of the dough circle (the other half gets folded over the top). Sprinkle each with ¼ cup chopped pepperoni. Keep 1” free of filling around the edges. 11. Fold the top half of the circle over the filling. Stretch/adjust the dough until you can crimp the edges to seal up the calzone. Make sure you pinch and roll those edges to make sure the calzones don’t come apart while baking. 12. Place the calzones on a greased baking sheet, and let them rise for 30 minutes. 13. Put two small slits in the top of each one and bake for 18-25 minutes in a preheated 425 degree oven, or until golden brown. You can brush with melted butter or use an egg white brush on the top for a glossy finish. Serve with your favorite marinara sauce for dipping.
