Bring the takeout experience home with my easy Chinese Chicken and Pepper Stir Fry :D Tender pieces of fried chicken tossed together in a luscious ginger sauce with crisp peppers and sweet onions. Perfect served over steamed rice, with noodles, or even on its own! This is a fast recipe that is great to make any day of the week :D Full recipe can be found below. I hope you enjoy this video! INGREDIENTS 1 lb, boneless skinless chicken thighs cut into bite-size chunks 1 tbsp, Chinese cooking wine (Shaoxing wine) 2 tbsp, cornstarch 3 tbsp, vegetable oil 1 cup, chicken broth 2 tsp, soy sauce 2 tsp, oyster sauce 2 large peppers of any colour, de-seeded and cut into large squares 1 medium sweet onion, cut into large squares Salt and pepper to taste 2 tsp, grated ginger Sliced green onions to garnish METHOD Add chicken, Chinese cooking wine, 1 tbsp cornstarch, and 1 tbsp of vegetable oil with salt and pepper to taste in a bowl. Stir to combine, and leave to the side to marinate. In a bowl, whisk together chicken broth, soy sauce, oyster sauce, 1 tbsp cornstarch, and salt to taste. Heat a large frying pan or wok on high heat almost to the point of smoking. Add 1 tbsp of oil followed by peppers and onions. Saute for 1 minute until tender-crisp, and then transfer to a bowl. In the same wok, add 1 tbsp of vegetable oil followed by marinated chicken, and cook for 5 minutes on high heat until the chicken has browned and cooked all the way through. Transfer to the same bowl as the peppers and onions. Reduce heat to medium, and if necessary add remaining tbsp of oil to wok followed by the grated ginger. Saute for 10 seconds, and then whisk sauce ingredients before pouring into wok. Stir continuously, increasing heat to high until the sauce has thickened and has become glossy. Then tip in peppers, onions, and chicken, and stir to coat. Allow to simmer for a minute. Remove from heat and garnish with sliced green onions.
