Ingredients

  • 12 oz spaghetti
  • 1 lb ground turkey
  • 1 can (28 oz) crushed tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. 1Cook the spaghetti according to package instructions until al dente. Drain and set aside.

  3. 3Add chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.

  6. 6Reduce heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup mashed potatoes
  • 1 large egg
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp unsalted butter
  • 1/4 cup chopped fresh basil
  • salt and pepper to taste

Instructions

  1. 1In a large bowl, combine the mashed potatoes, flour, egg, salt, and nutmeg. Mix until a dough forms.
  2. 2On a floured surface, knead the dough gently until smooth, about 2-3 minutes.
  3. 3Divide the dough into 4 pieces. Roll each piece into a long rope, about 1/2 inch thick.
  4. 4Cut the ropes into 1-inch pieces to form the gnocchi. Use a fork to create ridges on each piece if desired.
  5. 5Bring a large pot of salted water to a boil. Add the gnocchi in batches and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
  6. 6In a saucepan, melt the butter over medium heat. Add the heavy cream and bring to a simmer.
  7. 7Stir in the Parmesan cheese and cook until the sauce thickens slightly, about 3-4 minutes. Season with salt and pepper.
  8. 8Add the cooked gnocchi to the sauce and toss to coat evenly.
  9. 9Serve hot, garnished with fresh basil.
