Rocky Road Bar https://youtu.be/R0-j_vF0mzo Ingredients 200g sugar 73g Water 1 tsp baking soda( American) / Bicarbonate soda ( British) Milk chocolate 2 packs of Oreo cookie 8 cubes White chocolate Instructions. 1. Measure sugar and place into a bowl with your water. * it is very important not stir or the sugar will crystallize. 2. Measure out some Baking soda/ bicarbonate soda. It is important to have this ready because once your water and sugar changes colour you need to be very quick! 3. Allow to boil and watch carefully, do not walk away. It will change suddenly. 4. As soon as it changes colour take off the heat and add your bicarbonate of soda/baking soda. 5. Stir in quickly using a whisk until your bicarbonate of soda/baking soda is incorporated. (Don’t over stir or your mixture will flatten and lose the bubbles that your bicarbonate of soda/baking soda just created. 6. Pout this into your covered tray. * I wanted a flat honeycomb but if you would like it thicker, then place in a small tin with high sides. 7. ****When mixing and pouring be careful not to spill or allow any of this to touch your skin it will give you a terrible burn. 8. Leave it on the side to cool down. Once it is completely cool place in your fridge. 9. Place some white chocolate into a bowl and place over some boiling water (ban-Maire) allow it to melt. 10. Meanwhile break up two packs of Oreo cookies on a covered surface. I use baking paper. 11. Once your chocolate is melted pour over your cookies and mix well. 12. Once your cookies are covered flatten out your mixture and allow to cool. Once completely cool I place it into the fridge to set. 13. Next, I place some milk chocolate (you could use dark) into a bowl and over boiling water (ban-Maire) to melt. 14. While melting I break up my honeycomb. You could leave as bigger chunks and dip these into chocolate or into smaller pieces as I do and make a bark. 15. Once the honeycomb is roughly covered (I like the honeycomb to show through the chocolate) then flatten out and allow to cool. 16. Once cool I also place this into my fridge to set. 17. I cut up both my barks into pieces and store in a box in the fridge. You could put a selection of pieces into a bag and give these as a gift to friends and family. 18. Any smaller pieces/ crumbs leftover I place in a separate container and use these for other recipes (cheesecakes/ice cream/yogurt. 19.
