Video Description

This is the perfect fresh but comforting winter dish, all done in one pan and loaded up with potatoes and fennel. Perfect for midweek when you don’t want to think too hard about dinner. Ingredients: 2 Chicken drumsticks 2 chicken thighs 100g charlotte potatoes (or any baby variety) 2 fennel bulbs 1 white onion 1 lemon handful of capers handful of olives 2 tsp oregano 175ml white wine Method: Sprinkle salt over the chicken and set aside. Slice the onion, potatoes, lemon and fennel and lay at the bottom of a large pot/pan thats oven safe. Top with your sliced olives and the capers. Drizzle with olive oil, salt and pepper. Pat the chicken dry and place on top, drizzle with olive oil, salt, pepper and oregano. Roast the whole lot in the oven at 200C for 30-40 minutes. About 15 minutes before taking it out, add the wine to the bottom of the pan. Remove from the oven after completed time and enjoy!
