  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. 1Preheat the oven to 375°F (190°C).
  2. 2Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  3. 3In a large skillet, heat olive oil over medium heat. Add the zucchini, bell pepper, and garlic. Sauté for about 5 minutes until the vegetables are tender.
  4. 4Stir in the cherry tomatoes, spinach, oregano, basil, salt, and pepper. Cook for an additional 2-3 minutes until the spinach wilts.
  5. 5In a large mixing bowl, combine the cooked pasta, sautéed vegetables, and marinara sauce. Mix well to combine.
  6. 6Transfer the pasta mixture to a greased baking dish. Top with shredded mozzarella and grated Parmesan cheese.
