Ingredients: 2 lbs. boneless skinless chicken breasts To Make the Marinade: ¾ cup milk ¾ cup mayonnaise 1 tsp. powdered buttermilk 4 tbsp. melted unsalted butter 4 tbsp. grated Parmesan cheese 1½ tsp. garlic powder 1 tsp. onion powder 1 tsp. dried parsley ½ tsp. dried dill ½ tsp. salt ¼ tsp. sugar ¼ tsp. black pepper ¼ tsp. mustard powder Additional Ingredients to Make the Dipping Sauce: 3 tbsp. softened cream cheese 1 tsp. lemon juice To Make the Coating: 2 cups plain panko breadcrumbs and 1½ cups grated Parmesan cheese 1½ tsp. black pepper 1 tsp. garlic powder 1 tsp. salt 1 tsp. paprika 1 tsp. dried parsley ½ tsp. light brown sugar 2 tbsp. chopped Italian flat leaf parsley for garnish (optional) Recipe: Using a meat mallet, pound the chicken gently to even out the thicker areas. Pound no thinner than ½”-3/4” thick. Cut the chicken into 2” pieces. Place the chicken pieces into a large Ziplock bag and set aside. In a dressing shaker combine milk, mayonnaise and buttermilk powder. Close the lid and shake well to combine. Open the lid to the shaker and add melted butter, Parmesan cheese, garlic powder, onion powder, dried parsley, dried dill, salt, sugar, black pepper and mustard powder. Close the lid and shake well to combine. Pour ½ the marinade into the Ziplock bag with the chicken. Reserve the remaining marinade and set aside. Massage the marinade into the chicken pieces. Seal the marinade bag and refrigerate for 6-8 hours or overnight. Add cream cheese and lemon juice to the reserved marinade. Cover the lid and shake well to combine. Place it in the refrigerator until ready to use with the chicken. In a medium size bowl, combine panko breadcrumbs, Parmesan cheese, black pepper, garlic powder, salt, paprika, dried parsley and light brown sugar. Using a fork combine the ingredients well. Cover the bowl with plastic wrap and place in refrigerator until ready to use with the chicken. Once the ingredients have been chilled, remove the chicken pieces from the marinade bag. Shake off excess marinade and place chicken pieces onto a plate in one layer. Using a paper towel, gently remove some of the extra moisture from the chicken by placing the paper towel over the tops of the chicken pieces and press slightly. Then remove and discard paper towel. Discard bag of used marinade. Working in small batches, dip each chicken piece into the coating. Use your fingers to gently press the coating around each chicken piece. If you prefer a thicker coating, dip the chicken pieces into the batter twice. Place the chicken pieces onto a greased wire rack that fits over a baking pan. Preheat the oven to 400 degrees. Allow the chicken to rest on the wire rack for 10-15 minutes before baking. Bake chicken for 20-25 minutes or until golden brown and cooked to 165 internal degrees. To serve, arrange chicken bites onto a platter and sprinkle with parsley. Serve the chicken bites with the dipping sauce. Enjoy!
