This recipe draws inspiration from Samgyetang, Korean ginseng chicken soup. The chicken is stuffed with rice, aromatic ingredients and then roasted. This dish not only features the flavorful chicken but also includes rice with plenty of flavor. ------------------------------------------------------------------------------------------------------------------------------------------------------ Ingredients 600g or 1.3pound chicken 1cup short grain rice 1 tablespoon soy sauce 2 cloves garlic 2 jujubes 2.5cm or one inch length green onion 3 slices (one inch thick) zucchini 3 slices (one inch thick) carrot 2 shiitake mushrooms 3 shishito peppers Chicken seasoning 2 tablespoons olive oi 1 teaspoon kosher salt 1/3 teaspoon ground black pepper Instructions 1. Rinse the rice and drain. Place the rinsed rice in a large bowl. Add water to the rice and let it soak for 30 minutes. 2. Cover the bowl with plastic wrap. Poke several holes in the plastic wrap with a knife , then place the bowl in the microwave oven. Cook it for 4 minutes initially. After that, stir the rice and place it in the microwave for another 4 minutes of cooking time. 3. Take the bowl of rice out of the microwave. Mix the rice thoroughly, then season it with soy sauce. 4. In a small bowl, combine olive oil, salt, and ground black pepper, and mix well. 5. Rinse the chicken under water and pat dry. Wipe the inside of the chicken cavity with a paper towel. Then stuff it with seasoned rice, jujube, garlic, and green onion. Add a generous spoonful of rice into the cavity, then insert the garlic and jujube. 6. Close the chicken cavity with a skewer. Make a hole under the bone of the chicken leg, using a paring knife. The hole should be approximately an inch size. Criss-cross the other leg of the chicken over it. 7. Gently rub the prepared oil onto the chicken. Preheat the oven to 190 degrees Celsius or 374 degrees Fahrenheit. Place the chicken into the oven, Cook the chicken for an hour. 8. Cut the zucchini and the carrot intoone inch thick rings. Rinse shishito peppers. Prepare shiitake mushrooms. Season the prepared vegetables with salt, ground black pepper. Add olive oil to the vegetables and toss. 9. After an hour, remove the chicken from the oven. Add the seasoned vegetables to the oven dish with the chicken. Place the chicken and vegetables to the oven and continue cooking for an additional 15 minutes. 10. Rest the chicken for 20 minutes. Cut the chicken in half and serve.
