Soup recipe Ingredients: 4 stalks of celery chopped 1 medium onion diced 1 large carrot chopped 3 cloves of garlic diced 1 inch of fresh ginger grated ½ tsp turmeric ½ tsp black pepper 2 tsp vegetable stock blend 1 cup red lentils- or any legumes you have 1 cup cooked sorghum-or any whole grain you have 1 cup cooked chickpeas with aqua faba 8 cups water 1 tsp marmite - if gluten free, use salt as marmite is not gluten free 1 tsp salt Instructions: Boil 8 cups of water in a kettle. Heat a large pot on stove and add celery, onion and carrot. Cook for 4-5 minutes until softened. Add garlic, ginger, turmeric, black pepper and stock. Mix well and cook for 1 minute. Pour in previously boiled water. Add lentils, sorghum and chickpeas. Stir in marmite. Bring to a boil and cook for 10 minutes or until lentils are cooked. Serve and enjoy! Paul’s Chia Pudding Ingredients: ¼ cup chia seeds 1 cup soy milk ½ cup okara 3 Tbsp cocoa powder 2 tsp maple syrup Instructions: Put all ingredients in a dish. Mix well, cover and refrigerate for 1-2 hours. Enjoy! Natasha’s Cheesecake Overnight Oats Ingredients: 1 cup oats 2 Tbsp chia seeds 1 cup unsweetened plant milk 2 Tbsp maple syrup 2 tsp vanilla 2 tsp white miso paste Instructions: Put all ingredients in a glass container.
