Ingredients: Mutton: 500g (you can increase the quantity slightly more if you like) Kohlrabi: 2 or 3 large (about 400g) Potato: 3 - 4 medium Onion: 2 medium Tomato: 2 medium Tomato paste: 2 ½ Tbsp Ginger/garlic paste: 2 Tbsp Fresh coriander (cilantro): About 1 cup Fresh green chili: 3 – 4 chilies Red chili powder: 1 Tbsp Kashmiri red chili powder: 1 Tbsp (this is mild like paprika, just for color optional) Turmeric powder: ½ Tbsp Cumin seeds: ½ Tbsp Black seeds (or onion seeds or Kalonji): ¼ Tbsp (optional) Garam masala: 2/3 Tbsp (optional) Cumin & coriander powder: 1 Tbsp Salt: To your taste Oil: About 5 Tbsp Method: Peel the Kohlrabi and potatoes, cut them large pieces, and place them in water. Prepare all the other ingredients as shown. Add oil in a pressure cooker (you can use an ordinary pot if you wish), fry cumin seeds & black seeds for a few seconds. Add the julienne onion, turmeric, and salt, and sauté for 3 minutes or so. Now add the mutton and ginger/garlic paste and fry for about 5 – 6 minutes until the oil separates. Add the cut tomatoes, rest of all the powder spices, and tomato paste. Put the lid (not locking) on and cook for about 4 – 5 minutes on medium heat until tomatoes totally soften. Add water (I added meat stock that was there in the fridge) about 3 large cups. Close the lid and pressure cook for about 7 – 8 minutes or about 6 – 7 vessels. Open the lid but make sure the steam should clear totally, and add the vegetables. Cook EXACTLY for 3 vessels and remove the pressure cooker from the heat and wait until the steam empties.
