Capsaicin oil offers potential for general cooking and making sauces and gravies. Unfortunately, the solvent process typically used to extract the capsaicin from the peppers results in a bitter tasting solution that does no favors to the taste of the food. About eight months ago, I began experimenting with ways to capture the capsaicin oil from peppers WITHOUT the use of solvents. I finally was able to mechanically capture the puddles of capsaicin found in super-hot peppers, and render the oil into a product that can be easily used, while avoiding the bitter taste. The result is the Alabama Hot Sauce 1 Million SHU Capsaicin Oil Reduction. It has been popular with my customers who seek such a product and offers potential to add heat in sauces and other foods.
