Our easy Beef Enchilada recipe with white sauce is one of our Tex-Mex favorites! Delicious homemade ground beef enchiladas are baked in a creamy white sauce that are SO tasty - don't be surprised when there's no leftovers! This is an easy beef enchilada casserole dish that is perfect for family dinners and it's one of my favorite potluck recipes to share! Everyone loves a great beef enchilada recipe, and this version has an incredibly delicious creamy white sauce that is amazing!! Let's get started with how to make beef enchilada casserole Easy Beef Enchilada Recipe Ingredients 1/2 of a yellow onion, chopped 1 - 2 tablespoons avocado or olive oil 1 lb ground beef 10 - 12 tortillas (flour or corn, taco sized) 1 - 2 tablespoons of flour 4 oz of tomato paste 1/2 cup water 2 tablespoons chili powder 1/4 teaspoon dried oregano 1/4 teaspoon garlic powder 1 teaspoon kosher or sea salt 1/2 teaspoon smoked paprika 1/2 teaspoon cumin 1 cup sour cream 2 teaspoons Better than Bouillon beef concentrated base 1/2 cup hot water 1 cup heavy cream 1/2 cup shredded cheddar cheese (or your favorite) pickled jalapeños, pico de gallo or salsa to serve Easy Beef Enchilada Recipe Directions Preheat oven to 350 degrees, and prepare a 12x9 baking dish, coating the bottom and sides with an oil spray. Chop one half of a yellow onion. Heat a large skillet over medium high heat. Add 1 - 2 tablespoons of avocado or olive oil to the skillet and heat, then add chopped onions, stirring to cook for about 2 minutes. Add the ground beef and brown, stirring to break into bite sized pieces and mixing it with the onion. While the ground beef is cooking, begin warming the tortillas in a skillet or on a griddle. After about ten minutes, once the beef is browned, add 1 - 2 tablespoons of flour. Stir and cook for about 2 minutes. Add 4 ounces of tomato paste and 1/2 cup of water, stirring to cook for 2 - 5 minutes. Next, add the spices: 2 tablespoons of chili powder, 1/4 teaspoon dried oregano, 1/4 teaspoon garlic powder, 1 teaspoon of salt, 1/2 teaspoon of smoked paprika and 1/2 teaspoon of cumin. Stir and cook for about 1 minute. Add more or less based on your personal tastes. Remove the filling mixture from heat, and add one cup of sour cream and stir to mix. To make the white sauce, combine 2 teaspoons of Better than Bouillon beef concentrate base with 1/2 cup hot water, whisking to dissolve. Add 1 cup of heavy cream and mix. Dip each tortilla into the white sauce to coat, then spread about three tablespoons of filling down the center of the tortilla, and roll it up. Place the enchilada seam side down into a dish sprayed with olive oil. Continue filling the tortillas, placing them right up next to each other. This recipe will fill about 10 - 12 tortillas. Pour the remaining sauce over the enchiladas, and spread a layer of your favorite cheese over the top. Bake in a 350 degree oven for about 30 minutes or until the sauce is bubbling and the cheese is beginning to brown. Let sit for 5 - 10 minutes before serving.
