It's a one-stop destination for smart, savvy and soulful women who want to be informed, entertained and inspired. --- Fiesta Corn Yield: Serves 4 Ingredients: 2 c. canned corn kernels 1 small yellow onion (cebolla) 1 green pepper 1 red pepper 1 c. button mushrooms 1 lime (lima), halved ½ c. fresh cilantro leaves 1 tbsp. olive oil (aceite) Salt and pepper, to taste Instructions: 1. Dice the cebolla and peppers and set aside. 2. Slice the mushrooms and set aside. 3. Chop the cilantro and set aside. 4. In the large skillet, heat the aceite over medium heat. 5. Add the cebolla and cook for 5 minutes, or until the cebolla looks clear. 6. Add the peppers and mushrooms, stirring them in with the wooden spoon. Cook for 4 minutes. 7. Add the corn and cook for another 3 minutes, or until all vegetables are soft. 8. Add salt and pepper to taste. 9. Squeeze the lima over the vegetables. 10. Stir in the cilantro and serve.
