Impossibly simple, customizable, and, most importantly, delicious, this quick baked dumpling dinner is going to be a new go-to for those nights when you want maximum flavor with minimal effort … or just need to clean out the fridge: a perfect motto for all our Five in 25 dinners! Dumpling Bake Serves 4 Five in 25 Five Ingredients 1 bag frozen dumplings (pot stickers) 1 head Bok choy 1 can (14 oz) coconut milk 1-2 T red curry paste (depends on brand) 1-2 T chili crisp Preheat oven to 425F. Cut the Bok choy into 1” strips and rinse thoroughly to remove any dirt. Add curry paste and coconut milk to a 13x3 or similar size baking dish. Whisk to combine. Add chopped Bok choy and bag of frozen dumplings. Stir to combine and bake for 15-20 minutes or until dumplings are golden brown and curry sauce is bubbling. Garnish with the chili oil. Optionally, you can also garnish with sesame seeds, chives or green onions. Serve over rice or noodles with more chili oil if desired.
