INGREDIENTS (Serves 2/3): For the Lamb and Potatoes: 4 lamb steaks (approximately 400g total, 1cm thick) 4-5 medium potatoes (about 400g) 4 tablespoons olive oil 2 sprigs fresh rosemary 3 cloves garlic, sliced 50g sun-dried tomatoes, chopped 2 teaspoons capers, drained 80g olives, pitted 1/2 teaspoon chilli flakes 300g baby plum tomatoes, halved 125ml white wine Salt and black pepper to taste For the Garlic Mushrooms: 400g mixed mushrooms, sliced 3 tablespoons olive oil 1 cloves garlic, minced 2 tablespoons fresh parsley, chopped Salt and pepper to taste For the Minted Peas: 300g frozen peas 2 tablespoons olive oil 1 cloves garlic, minced 2 tablespoons fresh mint, chopped 1 tablespoon balsamic vinegar Salt to taste METHOD: Begin by washing and slicing the potatoes into 1/2 cm rounds. Heat olive oil in a large, heavy-based pan and fry the potato slices with a sprig of rosemary until golden and crispy on both sides. Remove and set aside. Season the lamb steaks with salt and pepper. In the same pan, sear the lamb steaks for 2-3 minutes each side until browned. Remove and rest.
