Ande Chole Recipe | Eggs With Chickpeas Curry | Anda Chanay Recipe | Anday Cholay | Anda Chanay | Ande chhole | Anda Chanay Recipe | Ande Chole Ka Salan | Anda Channa | Egg Chickpea Curry | Chole Curry Ingredients for Anda Chole: (Tsp- Teaspoon; Tbsp- Tablespoon ) - Chole (dried chickpeas) - 1 cup (around 200 gms) - Eggs- 6 boiled and shelled Tempering : - Cumin seeds -1 tsp - Black cardamom-3 - Bay leaves-2 - Whole red chillies-2 Spice Powders: - Turmeric powder- 1/2 tsp - Red Chilli powder-1 tsp - Coriander powder-1.5 tsp - Cumin powder-3/4 tsp - Kashmiri Chilli powder-1 tsp - Garam Masala powder-1/2 tsp - Kasuri methi, dry roasted and crushed- 1.5 tsp Other Ingredients: - Onions grated -2 big onions (200 gms) - Ginger garlic paste -1.5 tsp - Tomato paste (fresh blended)- 2 medium (180 gms-around 2 cups paste ) - Green chillies chopped-2 - Green chillies, sliced-2 (to be used as garnish) - Coriander leaves, chopped-3 tbsp - Oil-4-5 tbsp - Ghee -2 tbsp - Salt- 3/4 tsp + 1/2,tsp while boiling Preparation: - Soak the chole overnight or for 5-6 hrs in water. - Pressure cook the chole with salt and 1/4 tsp of turmeric powder for 2-3 whistles. - Strain the water and set aside the water for use later. - Dry roast the kasuri methi for around 30 secs and then crush it with your hand once cooled. - Peel and grate the onions. You can use a handheld grater or can also use a grinder. - Chop 2 green chillies and slice 2 green chilllies to be used as garnish. - Boil 6 eggs, peel and set aside. - Heat 1 tbsp oil in a kadhai & fry the eggs. Remove and set aside. Process: - Add more oil to the same kadhai and add the whole spices for tempering. - Now add the grated onion and fry on medium heat for around 5-6 mins till light brown. - Now add the ginger garlic paste. - Mix and fry on low heat for 2-3 mins till raw smell is gone. - Now add the homemade tomato paste and mix it well. - Then add the spice powders (other than garam masala powder), salt and mix and fry on medium heat for 4-5 mins till the masala has browned and oil separates. - Now add the boiled chhole and mix and cook for 2 mins . - Now add 300-350 ml water and give a mix. - Add the garam masala powder, chopped green chillies, kasuri methi and mix well. - Now add the fried eggs, give a mix and simmer for around 3 mins. - Garnish with fine chopped coriander leaves and sliced green chillies (optional). #andachanay #andachole #chole #cholayrecipe #eggchickpeas #eggcurry #chanacurry #spiceeats #spiceeatsrecipes
