Ingredients

  • 1 can (15 oz) refried beans
  • 1 cup guacamole
  • 1 cup sour cream
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1/2 cup sliced black olives
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro
  • 1 tsp ground cumin
  • 1/2 tsp salt

Instructions

  1. 1In a large serving dish, spread the refried beans evenly on the bottom.
  2. 2Layer the guacamole on top of the refried beans, spreading it evenly.
  3. 3Next, add a layer of sour cream over the guacamole.
  4. 4Pour the salsa over the sour cream layer, spreading it out evenly.
  5. 5Sprinkle the shredded cheddar cheese over the salsa layer.
  6. 6Add a layer of diced tomatoes on top of the cheese.
  7. 7Sprinkle sliced black olives over the tomatoes.
  8. 8Garnish with chopped green onions and fresh cilantro on top.
  9. 9Season with ground cumin and salt to taste.
  10. 10Serve with tortilla chips for dipping.

  • 1 medium watermelon
  • 1 cup blueberries
  • 1 cup strawberries
  • 1 cup pineapple chunks
  • 1/4 cup fresh mint leaves
  • 1 lime (juiced)
  • 1 tbsp honey (optional)
  • Wooden skewers

Instructions

  1. 1Cut the watermelon into star shapes using a star-shaped cookie cutter.
  2. 2Wash the blueberries and strawberries. Remove the stems from the strawberries and cut them in half.
  3. 3Cut the pineapple into bite-sized chunks.
  4. 4On each wooden skewer, thread a star-shaped watermelon piece, followed by a blueberry, a strawberry half, and a pineapple chunk. Repeat until the skewer is filled, leaving some space at the ends.
  5. 5In a small bowl, mix the lime juice and honey (if using) to create a dressing.
  6. 6Drizzle the lime-honey dressing over the skewers or serve it on the side for dipping.
  7. 7Garnish the skewers with fresh mint leaves for added flavor and presentation.
  8. 8Serve immediately as a refreshing snack or dessert.
