Place peaches on a piece of aluminum foil. 2. Brush with olive oil and place in the air fryer. 3. Roast in an air fryer at 350 degrees for 3-5 minutes until peaches begin to caramelize. 4. Remove from the air fryer and allow to cool slightly. 5. Place peaches in a medium-size bowl and toss with lemon juice, sugar, vanilla extract, and cornstarch. 6. Cut pie crusts into 6(5-inch) circles. 7. Place one slice of brie cheese down in the center of the dough. 8. Place about 1 tablespoon of peach filling in the center of each circle. 9. Drizzle peach mixture with 1 tsp of balsamic glaze. 10. Brush edges of dough with water; fold the dough over filling to form half-moons. 2 / 2 11. Crimp edges with a fork to seal; cut 3 small slits on top of pies. 12. Brush the tops of the pies with the beaten egg. 13. Place in air fryer on a rack or in the basket and bake at 350 degrees for 12-15 minutes or until golden brown. 14. Allow cooling slightly before eating.
