Chicken mortadella bologna recipe, home made with fresh chicken meat, spices and herbs, in sous vide, slow cooking to retain the moisture and remain soft and tender. This recipe is extremally easy, and requires no special equipment and the results are simply amazing. The ingredients for our recipe are: 1 kg of chicken breast meat, minced (3 times in the machine) 100 gr of fine white flour 30 gr of chili paste (the link for this recipe is below) https://youtu.be/w_30pCm7IBU?si=ZVsYPIAdxFZg4wDk The spices: 2 large spoons of: sweet paprika, garlic powder 1 large spoon of: smoked paprika, chicken seasoning, mustard powder, lemon salt 1/4 spoon of: white pepper, nutmeg Into a large bowl we mix all the ingredients very well, kneading for 5 - 10 minutes till the dough is tightly fused together. Then onto a clean film we place our seasoned chicken meat, and roll into the shape of large, thick tube, ensuring we don't trap any air bubble in within, then we close both ends, by turning and twisting the film and wrapping it around very well. We repeat this another time, so to have a double layer of fil, then into a thick plastic bag, we place our tube ensuring we don't trap any air, and tightly close it. Again to repeat this with another plastic bag. We prepare our large pot, with water, ensuring that the temperature doesn't exceed 80 c (to be safe), and remains constant for 4 hours, as we will need 1 hour of cooking in the SOUS VIDE for each 2cm of meat thickness. So as per our case we have a tube of 8-10 cm, then we will cook for 4 plus hours. The Ideal temperature is 65 - 75 cm in the sous vide. If you don't have the special machine, you can do it, by setting the temperature, so you have a constant stream of small bubble surfacing and you are able to keep your hand in the water for a maximum of 2-3 seconds. Into the Pot, we submerge the bag, and weight it down with a stone, and place another stone below it, and allow it to slow cook untouched, ensuring every hour to replenish the water to keep the meat submerged fully. After cooking, we take out and immediately drop in to a bowl with cold water, as this will help firm up the meat, and we keep for 5 minutes, then we remove and put in the fridge over night. The next morning, we remove from the plastic wraps, we cut in think slices with a sharp knife, and we enjoy this delicious and healthy snack any time with legumes, mustard, and cheese.
