These cookies are soft and chewy with a cheesecake filling :) Feel free to omit the espresso powder if you're not a fan of coffee ♡ This recipe makes 12 cookies *Cheesecake Filling* 6oz (170g) softened cream cheese 1/4 cup (50g) sugar 2 tbsp heavy cream (any milk or sour cream will also work) 1 tsp vanilla ♡ *Divide the cheesecake mixture into 12 tablespoon sized dollops* ♡ *Place in the freezer while making the cookie dough* *Gingerbread Latte Cookies* 1/3 cup (66g) sugar 1/3 cup (66g) light brown sugar 1 cup (226g) browned butter (cooled) 1 egg 2 tsp vanilla 1/3 cup (113g) molasses (not blackstrap) 2 and 1/4 cups (280g) all-purpose flour 1 and 1/2 tsp baking soda 2 tbsp instant espresso powder (I use Nescafe Gold) 1 and 1/2 tsp ground ginger 1 tsp cinnamon 1/4 tsp ground cloves 3/4 tsp salt 1/2 cup (100g) sugar for rolling the cookies ♡ *Chill the cookie dough in the freezer for 10-15 minutes* ♡ *Bake 6 cookies at a time at 325F (162C) for 10-12 minutes* ♡ Each cookie should be about 2 tablespoons :) Gingerbread cookie recipe from Browned Butter Blondie ♡
