Yeah, yeah, everyone's got the best BLT, right? Well, what about the BLTC? 🧀 That's right! Throw some ooey gooey melted cheese right on top, and a few other things too... 😉 Jasper Mirabile’s Ultimate Grilled BLTC Sponsored by Crystal Farms 2 Focaccia squares 1/4 cup Pepper jelly 6 oz. Crystal Farms Pepper Jack sliced Cheese 1 lb. Bacon 1 cup Arugula 1 sliced tomato Lemon aioli 1 tablespoon Fig preserves Lemon Aioli 1/2 cup mayonnaise 1 lemon, juiced 2 tablespoons. Extra virgin olive oil 1 garlic clove, finely minced Salt to taste Prepare Aioli:  Mix mayonnaise with olive oil, lemon juice, minced garlic, and salt. Refrigerate until ready to use.  Place bacon on a rack over a sheet pan and brush with pepper jelly. Cook until bacon is browned on both sides and fat has rendered. Cut focaccia in half and spread with aioli. Lightly spread fig preserves on top one slice and aioli on the other slice. Layer with tomatoes, bacon, cheese and arugula. Use food release on a sauté pan or grill plate at medium heat. Add the sandwich to the pan and toast on both sides until cheese is melted inside.
