Check out how to make the Rigatoni al Segreto, just like the New York City’s most famous Italian restaurant, the Gino’s, (Serves 4-5 people) Ingredients: Red onion 1 medium (diced) Red pepper 1 medium (diced) Salt 2.5 tsp for gravy 3 tsp for pasta 1 tsp to add in the end Black pepper (freshly ground) 1.5 tsp for gravy 1/2 tsp to add in the end Garlic 2 cloves (finely chopped) Chilli flakes 1 tsp Beef mince 500g Crushed tomatoes 2 medium Tomato paste 3/4 cup Dried Basil a pinch Rigatoni pasta 400g Parmesan cheese 2-3 tbsp Oil 4 tbsp for gravy 4-5 tbsp for boiling pasta Parsley chopped (for garnishing) Directions: Sauté onion in 4 tbsp oil till translucent. Then add chopped garlic and red peppers & sauté for a while. Add 2.5 tsp salt, 1.5 tsp black pepper, 1 tsp chili flakes & beef mince. Sauté on medium-high flame till the mince turns slightly golden. Also, add a pinch of dried basil. Add crushed tomatoes and tomato paste and cover to cook on low flame for about 15 minutes. The sauce should not be very thick as we want the pasta to cook a bit in this sauce. You can also add a bit of water to it. Meanwhile, take a large pot and boil the rigatoni pasta in it. Add 4-5 tbsp oil and 3 tsp salt to this water. Boil the pasta for 10 minutes & drain it. It should be el denté. Now mix the sauce into the pasta. Add 1 tsp salt and 1/2 tsp black pepper. Also, sprinkle parmesan cheese. Cover to cook on very low flame for about 5-10 min. Garnish with chopped parsley and serve.
