INGREDIENTS For the Lamb Rack/ Chops 2 Lbs Lamb Rack , frenched Kosher salt and pepper to taste 2 Tbs Vegetable oil or rendered fat 6 Cloves garlic, whole 1 Tbs Ginger, thin match sticks 6 Sprigs thyme, fresh 3 Sprigs Rosemary, fresh 1 Tbs Ghee 1 Tbs Garam masala spices, whole ( Ingredients below) For The Vegetables 1 Small head Cauliflower, cut into florets 1 Carrot, peeled and cut into thick match sticks 1 Medium red onion, peeled and quartered 3 cups Baby spinach 1/4 Cilantro and parsley Pinch, red pepper flakes Kosher salt and pepper to taste To Serve 1 Tbs Masala sauce Cilantro and parsley Garam masala spices 6 Cloves, whole 1/4 Tsp Coriander, seeds pinch, cumin seeds 1 Star Anise 4 Cardamom pods 1 Cinnamon stick, broken into pieces (3) For the Masala sauce 1 Large Red onion, peeled and thinly sliced 1 Tbs garlic, minced 1 Tbs Ginger, minced 1 red bell pepper , diced small 2 Ripe Tomatoes, diced 6 Curry leaves
