Add the salt. Add the Grits: Slowly whisk in the yellow corn grits to prevent clumping. Reduce the heat to low. Cook the Grits: Cover the saucepan and let the grits simmer, stirring occasionally to prevent them from sticking to the bottom. Cook for about 20-25 minutes, or until the grits are tender and creamy. If the grits become too thick, you can add more water or broth as needed. Add Vegan Butter Once the grits are fully cooked, stir in the vegan butter or olive oil and nutritional yeast (if using) for a rich, creamy texture and a slight cheesy flavor. Add coconut milk Stir in the plant-based milk to achieve your desired consistency. The grits should be smooth and creamy. Season and Serve: Taste the grits and adjust seasoning with additional salt and freshly ground black pepper as needed. Serve hot, topped with your favorite vegetables, vegan "scallops," or simply as a delicious side dish. Tips: For extra flavor, you can sauté some minced garlic or onions in the vegan butter before adding the grits. Leftover grits can be stored in the fridge for up to 3 days and reheated with a little additional water or milk.
