Specially during monsoons, when it is available in abundance and tastes the best, we make a lot of dishes with corn at home. However, Bhutta curry is a real specialty in my house as it’s my mother-in-law’s popular Rajasthani recipe taught to her by her dad. I’ve learnt this from her though I still feel I can’t ever get it as amazing as she does Do try and let me know in the comments below as to how your family enjoyed it Bhutta Curry Ingredients For The Dahi Ka Masala 1 Cup Dahi 1 Tbsp Garlic Paste 1 Tbsp Ginger Paste Salt to taste 2 Tsp Red Chilli Powder 1 Tsp Turmeric Powder 1 Tbsp Coriander Powder For The Curry 3 Tbsp Oil 3 medium-sized sliced onions 2 medium-sized roughly chopped tomatoes 2 corn cobs cut into 3 or 4 chunks Water as required 1 Tbsp chopped coriander for garnish Method: 1. For the dahi ka masala, take dahi in a bowl & whisk it well to get a smooth consistency. Then add the ginger-garlic paste, salt, red chilli powder, turmeric powder & the coriander powder & mix well until all the masalas have blended in well. Keep aside. 2. Heat the pan & then add the oil. Once the oil is hot, add the sliced onions & sauté till they turn brown. 3. Once the onions turn brown, add the prepared dahi masala & leave it to cook until it starts to release its oil. 4. Then add the tomatoes & allow it to cook for a few minutes. 5. Now add the corn chunks & toss them well with all the other ingredients and masala. 6. Finally, add water to fully submerge the cob chunks & bring it to a boil. Then cover & allow it to cook till the corn becomes soft yet retains a slight bite to it. 7. Once ready check for seasoning.
