RECIPE 7 Eggs 3 Oz Ground Pork Rinds 6 Strips Bacon, Diced 3 Oz Gruyere Cheese 2 Sprigs Green Onions, Sliced (optional) 1/4 tsp White Pepper Shake Cayenne Pepper 1 tsp Salt 1) Add your pork rinds and 3 eggs to a bowl and whisk together until homogenous. Once mixed, set aside for 5 minutes to let the pork rinds hydrate. 2) Saute your bacon over medium high heat until desired done-ness. Once at 90% done, add in your green onions and saute for one minute. Allow this to drain on a paper towel to remove excess bacon grease. 3) Grab a 9" pie pan and pour your pork rind crust mixture into it. Spread evenly with a spoon or offset spatula. Throw this into an oven at 350ΒΊF for 5 minutes just to give the crust a head start. 4) While the crust is "blind baking", crack your remaining four eggs into a bowl and add in your salt, white pepper, and cayenne. Whisk together. 5) After the 5 minutes, remove your crust from the oven. Pour in your bacon/green onion mixture, your eggs, and finally grate your gruyere over the whole thing. Place this back into your still hot oven for 18-21 minutes or until there is no more jiggle in the eggs. 6) Let rest for 10 minutes before serving.
