Dina, Delia and Emma share their grandmother's recipe for culurgiones - they're a little bit different to the others we've filmed (I love how there isn't one recipe). This pasta definitely benefits from being a team production. Halved quantities are: 1 kilo of floury potatoes, 750g spicy cheeses - preferably a mix of sheep and goats cheeses, 250g of fresh salted cheese like feta, 1 tablespoon of lard, 1 tablespoon of chopped mint. Then for the pasta dough, you'll need 500g of durum wheat flour/semola rimacinata, a tablespoon of lard, and about 250ml of water. On another note, I want to share something exciting with you.
