These zesty, curry fries are baked instead of fried, so they're a bit healthier...but the spicy orange ketchup makes them burst with flavor. YUM! Baked Curry Fries with Spicy Orange Ketchup Serves 4 Ingredients: For the Fries: 3 Idaho potatoes, cut into ¼ x ¼ strips 3 tbsp extra virgin olive oil 3 tbsp curry powder 2 tsp sea salt 4 cloves garlic, minced 2" piece ginger, peeled and minced For the Ketchup: ¼ cup ketchup ¼ cup orange marmalade Hot sauce, to taste* Directions: Preheat the oven to 450 degrees. In a large bowl mix together all the ingredients for the Curry Fries. Oil a sheet pan and evenly disperse the fries onto the pan. Bake until golden brown and crispy, approximately 20 minutes. While the fries are cooking, make the ketchup.
