Crunchy asparagus and crispy golden tofu make a perfect pair when mixed together with a flavorful soy sauce. This dish can be served as a side dish or as a fancy addition to special tables. ------------------------------------------------------------------------------------------------------------------------------------------------------ Ingredients 380g or 14oz tofu(firm) 100g or 3.5oz asparagus 2 cloves garlic 1/2 teaspoon kosher salt, for blanching the asparagus 2 to 3 tablespoons of vegetable oil Sauce 4 tablespoons soy sauce 1 teaspoon brown sugar 3 tablespoons mirin 2 tablespoons water 1 tablespoon chopped white part of green onion. Instructions 1. Peel off the skin of the asparagus with a vegetable peeler. Cut them into one and a half inch pieces. 2. Thinly slice the garlic. Chop the white part of the green onion. 3. Drain water from the tofu for 20 minutes. Cut the tofu into 1-inch-thick slices. 4. Add salt to the boiling water. Place the asparagus to the hot water and blanch them for 15 seconds. Remove the asparagus from hot water, and drain. 5. Pat dry the tofu including between each piece. 6. Heat the pan over medium heat. Add an oil to the pan and place the tofu in it. Shallow fry both sides of the tofu until golden. Transfer the tofu to a wire rack to remove any excess oil. Make the pan dry by wiping it with a paper towel 7. In a small bowl, combine soy sauce, mirin, water, brown sugar, and the prepared chopped green onion. Mix all the ingredients thoroughly. 8. Add a teaspoon of oil into the pan and heat it to a medium heat. Add sliced garlic and stir-fry until fragrant. Place the blanched asparagus and stir fry them for a minute, then pour the sauce into the pan. Increase the heat, bring sauce to a boil then add the pan-fried tofu to the pan. Drizzle sesame oil, add toasted sesame seeds to the pan and turn off the heat.
