Hi Guys, today I’ll show you How to Make Corn Cakes. These sweet cakes are similar to pancakes but with a different texture. I’ll be using fresh corn to makes these yummy cakes. You can substitute frozen or canned if fresh corn is unavailable. Ingredients: Cornmeal: ½ cup - 70g All Purpose Flour ½ cup - 60g Baking Powder - ½ tsp Salt - ¼ tsp Sugar - 4 tablespoons - 50g Milk - ½ cup - 120ml Butter melted - 4 tablespoons - 60ml Egg - 1 large Corn Kernels - ½ cup - 90g All the ingredients are listed below. We’ll need ½ cup of milk, ½ cup of cornmeal, ½ cup all purpose flour, 4 tblsps of sugar, 4 tblsps butter we will melt this,1 large egg, ½ tsp baking powder, ¼ tsp salt and some corn. I’m using fresh corn. If you’re using frozen corn, cook it first. The fastest way to cook fresh corn is to take the outer husk off, rinse the corn under water, put it on a plate and microwave it for one minute. Turn it oven and microwave it for another minute. In 2 minutes, you will have perfectly cooked corn. The corn is cooked, it’s steaming hot, too hot to handle right now so I’ll leave it for a minute. When it’s cool enough to handle, take the husk off and snap off the end. Remove the silk with a paper towel, that’s really the only annoying part of making fresh corn. Stand the corn up and cut off the kernels with a knife. I’m using half a cup of these kernels. They are cooked perfectly, really sweet and juicy. You can eat the rest with butter and salt. Add the cornmeal to the all purpose flour, the baking powder and salt. Mix that up with my baby whisk. Beat up the egg and pour it into the milk. Add the melted butter and mix well. Add the sugar. Now the dry ingredients, it’s easy to mix with a fork. Lastly the corn kernels. Now our simple batter is ready. Heat up a griddle and add a bit of butter. Pour in about a ¼ cup of batter and spread it out a little as the batter is thick. Cook for 2 minutes on one side until golden. Flip it over and cook for about a minute on the other side. You can see it’s cooked on both sides. This recipe will make 4 or 5 corn cakes and they cook very quickly. Before you take them off the pan, put a little bit of butter on top and they taste even better. These are sweet on their own. They do however taste great with honey. The cakes are a little crispy on the outside and have a great texture from the corn meal. The corn kernels pop in your mouth and it’s like a sweet, juicy explosion.
