Instructions

  1. 1Heat olive oil in a large skillet over medium heat until shimmering.
  2. 2Add chopped onion and bell pepper; sauté until softened, about 5 minutes.
  3. 3Stir in minced garlic and cook until fragrant, about 1 minute.
  4. 4Add rice and toast for 2-3 minutes, stirring frequently.
  5. 5Pour in vegetable broth and peri peri sauce; bring to a boil.
  6. 6Reduce heat to low, cover, and simmer until rice is cooked, about 15-20 minutes.
  7. 7Remove from heat and let sit, covered, for 5 minutes.
  8. 8Fluff rice with a fork and stir in corn and peas.
  9. 9Add lemon juice, chopped parsley, salt, and black pepper to taste.
  10. 10Serve warm as a side or main dish.

Ingredients for Peri-Peri Sauce Red chilies whole 4 Button red chilies 12 Crushed red pepper 2 tbsp Oil ½ cup Lemon juice ¼ cup Crushed coriander 1 tbsp Garlic crushed 1 tbsp Onion 1 small Lemon salt 1 tsp White vinegar ½ cup Crushed mustard seeds 1 tbsp Salt 1 tsp METHOD Blend all the ingredients very well until sauce smooth. Trinchado: Ingredients for Column 1 Chicken boneless ½ kg cut into 1 inch cubes marinate with Soya sauce 1 tbsp Peri-peri sauce 1 tbsp Lemon juice 1 tbsp Worcestershire sauce 1 tbsp Salt ½ tsp Black pepper ½ tsp Paprika ½ tsp Oil 1 tbsp Ingredients for Column 2 Oil 2 tbsp Garlic paste 1 tsp Peri-peri sauce sieved 3 tbsp Flour 1 tbsp METHOD Marinate cubes of boneless chicken with all the ingredients of column 1 for 30 mins. Heat oil, fry garlic for 2 mins, add in marinated chicken, cook for 8-10 mins till chicken tender, add 1 cup water for gravy, when mixture boiling thicken gravy with flour paste, lastly add in sieved peri-peri sauce and remove, serve with peri-peri rice Peri Peri Rice : Ingredients Boiled rice 3 cups Oil 2-3 tbsp Capsicum cubes ½ Tomato cubes ½ Peri-peri sauce 2 tbsp Salt ½ tsp Chicken powder 1 tsp METHOD Heat oil in a wok, add boiled rice with peri-peri sauce and veggies, salt and chicken powder, toss well and serve. Espetada Chicken: Ingredients Boneless chicken cubes ½ kg of 3 inches each flattened slightly, marinate with Salt 1 tsp Lemon juice 2 tbsp Soya sauce 1 tbsp Garlic paste 1 tsp White pepper ½ tsp Meat tenderizer 1 tsp Oil 2 tbsp peri-peri sauce 2-3 tbsp Tomatoes 2 Capsicum 2 METHOD Flatten chicken cubes, marinate with all the given ingredients, put on skewers, alternating with cubes of tomato and capsicum, cook in a pre-heated oven on 180 D for 20 mins, give dum of coal and pan fry in 2 tbsp oil in fry pan, serve with rice or pita bread.
