Ingredients: 1 Snake River Farms - Wagyu Denver Steak extra-virgin olive oil (or binder of your choice) Kings BBQ - King of the Beef Rub Kosher Salt 1 shallot, finely chopped 1 jalapeño, finely chopped 1 Habanero pepper, coarsely chopped 1/2 cup cilantro, finely chopped 3-4 garlic cloves, minced 1/4 cup flat-leaf parsley, finely chopped 1/2 cup red wine vinegar 3/4 cup extra-virgin olive oil 2 tbsp. oregano, finely chopped 2 pinches of Kosher Salt Directions 1. Light Royal Oak Charcoal and preheat the grill 2. Pat dry the Steak and add a some Kosher Salt to the Steak and return to the refrigerator. We are salt brining the steak while the charcoal is getting hot and we make the Chimichurri 3. Make the Chimichurri and place it in the frig for the flavors to blend 4. Set up the Grill to have a High Zone and Cool Zone 4. Remove the steak from the fridge and whip off any excess kosher salt. 5. Add a high temp oil binder to the steak and season with Kings BBQ - King of the Beef Rub 6. Place the steak on the Cool side of the Rack and rotate it over the Hot Zone and grill for 2-minutes. 7. Repeat this process until you reach an internal temp of 121°-125° or the doneness that you desire 8. Let the steak rest for 5-10 minutes in a warm place before slicing. 9.
