Stuffed Vegetables or Légumes Farcis are veggies stuffed with meat, topped with parmesan cheese, and drizzled with olive oil. They are so good, even kids like them. This recipe comes from my lovely mother-in-law whom I had the honor to shoot this video with while she was visiting us from France! *** You can also stuff eggplants, mushrooms, and potatoes! Drain and rinse with cold water. 4 - Remove the pulp and seeds from the tomatoes and the zucchinis, dig out the hearts of the onions to make room for the stuffing and blend together to make a purée. 5 - In a small bowl, soak the bread with a little bit of milk. 6 - Chop the parsley and garlic together. 7 - In a large bowl, mix together the pork and the beef, the vegetable purée, the garlic with parsley, add salt and pepper to taste. Mix with your hands until combined. 8 - Add the eggs and the soaked bread and continue mixing with your hands until everything comes together. 9 - Stuff the vegetables and place them in a large dish lightly greased with olive oil. 10 - Sprinkle with parmesan. 11 - Drizzle with olive oil. 12 - Bake for about 45 minutes to 1 hour. 13 - Garnish with parsley before serving. #angeliquecooking #stuffedvegetables #legumesfarcis
