Lemon Crinkle Cookies Ingredients: • 1 1/2 cups (180g) all-purpose flour • 1/2 tsp (2g) baking powder • 1/4 tsp (1g) salt • 1/2 cup (113g) unsalted butter, melted • 1 cup (200g) granulated sugar • 1 large egg • 1 tsp (5ml) vanilla extract • 1 tbsp (6g) lemon zest (from about 1 lemon) • 2 tbsp (30ml) fresh lemon juice • Yellow food coloring (optional) • 1/2 cup (60g) powdered sugar (for rolling) Instructions: 1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. 2. In a medium bowl, whisk together the flour, baking powder, and salt. 3. In a large bowl, mix the melted butter and granulated sugar until well combined. 4. Beat in the egg, vanilla extract, lemon zest, and lemon juice until well combined. If using, add a few drops of yellow food coloring and mix until the color is evenly distributed. 5. Add the dry ingredients to the wet ingredients, mixing until just combined. 6. Cover the dough with plastic wrap and chill in the refrigerator for at least 30 minutes. 7. Scoop tablespoon-sized portions of dough and roll them into balls.
