I take a few shortcuts here that you might find helpful for soups in general: using kneaded roux or buerre manie to thicken it, and using pre-cooked homemade (or store-bought) gnocchi instead of making dumplings from scratch. Making gnocchi in batches and freezing them is an old restaurant trick I still use all the time. Make sure to bring your gnocchi to room temp before cooking the from frozen.
