This is Dan from Primal4Life bringing you a "Sauerkraut egg and tomato on coconut Paleo Bread." I really can't get enough of these awesome sandwiches, thanks to Julian Bakery and their Paleo Bread lineup. Coconut or Almond, that's my biggest decision of the day... Although I cannot tell a lie, I do prefer the coconut for more of my sandwiches! They both taste wonderful, they are low in carbs, and do not have any dairy, GMO's, gluten or grains! So for today's sandwich, I started with coconut Paleo Bread, crisped up in my toaster-oven... I made a couple local eggs with butter from grass-fed cows, a thick slice from an organic tomato, and a nice helping of sauerkraut. This should be interesting!! Ingredients: • 2 slices coconut Paleo Bread™ • Butter • 2 eggs • 1 thick slice tomato • 1/3rd cup Sauerkraut • Salt & Pepper to taste Directions: 1) Cook Paleo Bread™ in toaster oven 2) Heat up pan with butter 3) Add two eggs and cook to your liking 4) Add sauerkraut to pan (or separate pan if you prefer) and heat up 5) When toast is done, transfer to plate 6) Add eggs, sauerkraut and tomato 7) Add salt & pepper to taste Prep Time: • 2 minutes Cook Time: • 10 minutes Serves: • 1 Let's call this a home-run! In a way, it reminded me of a Ruben, the sauerkraut was absolutely a great addition to this sandwich. Normally I choose to eat my sauerkraut raw, as it has a lot of beneficial bacteria (aka probiotics). But I couldn't help myself... And the thick slice of tomato added some great flavors to compliment my eggs and coconut Paleo Bread. Don't forget the Celtic Sea Salt! Minerals, good fats, probiotics, and lycopene, this sandwich has it all!
